Update: Pay What You Want Arrives in Arlington, Texas

Another restaurant has made national news with its “Pay What You Want” campaign.  See “Is Pay What you Want Coming to a Restaurant Near You?”   Newly opened Potager Café in Arlington, Texas is allowing diners to eat as much as they like and then leave an amount that they feel is fair in envelopes crafted out of old magazine pages.

The restaurant has no printed menus and the meal choices change daily.  However, everything is fresh, organic, contain no pesticides or hormones, comes from local farms and prepared fresh daily in the Potager Café kitchen, under the watchful eye of Chef Nick Amoriello and owner Cynthia Chippendale.

“The first reaction is one of, I guess you could say, disbelief, just because it’s an out-of-the-norm concept,” Amoriello said, when asked about customer reaction to the payment policy.  He thinks most customers are fair.

Chippendale says, however, that she’s not getting rich.  Customers are leaving an average of about $7 and her food costs are running around $8.  However, she’s grateful she’s  been able to meet her payroll and is planning to expand by adding gardening and cooking classes.
