Spicy Chicken Wings for the Superbowl

The concept of hot, spicy chicken wings began in the sixties at the Anchor Bar in Buffalo, New York, when co-owner Teressa Bellissimo cooked leftover wings in hot sauce as a late-night snack for her son and his friends.

Bellissimo and Dick Winger, who sold hot sauce to the bar, took “Buffalo Wings”on the road and the rest is history. Now more than 1 billion wing portions are consumed during Super Bowl weekend, or more than 90 million pounds of wings.

1. Fried Chinese Five Spice Chicken Wings
Ingredients:
3 pounds chicken wings (12 to 14)
1 onion
1 1/2-inch piece peeled fresh gingerroot
2 tbsp soy sauce (preferably Kikkoman)
1 tbsp medium-dry Sherry
1 tbsp Chinese five-spice powder
1 tbsp sugar
2 tbsp plus 1 tsp coarse salt
2 tsp freshly ground black pepper, or to taste
1/2 cup cornstarch
6 cups vegetable oil

2. Easy Coconut Wings
Ingredients:
2 pounds cage free chicken wings (about 6)
1 cup coconut milk
1 cup chopped cilantro
Juice of 1 lime
1 tbsp yellow curry paste
2 Tablespoons almond oil
Salt
Red pepper flakes to taste

3. Jamaican Jerk Chicken Wings
Ingredients:
For the marinade,
1 onion, chopped
2/3 cup finely chopped scallion
2 garlic cloves
1/2 tsp dried thyme, crumbled
1 1/2 tsp salt
1 1/2 tsp ground allspice
1/4 tsp freshly grated nutmeg
1/2 tsp cinnamon
1/4 cup minced pickled jalapeno pepper, or to taste (wear rubber gloves)
1 tsp black pepper
6 drops of Tabasco, or to taste
2 tbsp soy sauce
1/4 cup vegetable oil
18 chicken wings (about 3 1/4 pounds), the wing tips cut off and reserved for another use.

4. Clarithas Fried Chicken Wings
Ingredients:
3 pounds chicken wings (16 to 18)
1 cup plus 2 tbsp coarse salt
2 onions
3 cups buttermilk
2 cups all-purpose flour
2 tsp cracked black peppercorns
1 tsp cayenne
2 cups vegetable shortening
1 stick (1/2 cup) unsalted butter

5. Spicy Sweet Glazed Chicken Wings
Ingredients:
3 quarts vegetable oil for deep-frying
2 1/2 pounds chicken wings (about 12)
2 tsp minced garlic
2/3 cup apricot preserves
1/3 cup soy sauce
1/3 cup ketchup
1 tsp Tabasco sauce, or to taste

6. Broiled Chicken Wings With Spicy Apricot Sauce
Ingredients
4 1/2 lb chicken wings (18 to 20), wing tips cut off and discarded
1 tbsp vegetable oil
1/2 tsp black pepper
1/4 tsp salt
2 cup apricot preserves
1/2 cup fresh lime juice
1 garlic clove, smashed
1/2 tsp ground cumin
1/2 tsp cayenne

7. BBQ Chicken Wings
Ingredients:
1/2 cup teriyaki sauce
1 cup oyster sauce
1/4 cup soy sauce
1/4 cup ketchup
2 tbsp garlic powder
1/2 cup white sugar
1 1/2 pounds chicken wings, separated at joints, tips discarded
1/4 cup honey

8. Easy Chicken Wings with Blue Cheese
Ingredients:
1 tbsp vegetable oil
1 tsp cayenne pepper
16 chicken wings
1/2 cup of plain yogurt
1/2 cup of buttermilk
4 oz of blue cheese
1/2 small onion
1 tsp Worcestershire sauce

9. Grilled Chicken Wings with Two Thai Sauces
Ingredients:
3 pounds chicken wings (12 to 14)
1/4 cup vegetable oil
3 tbsp fresh lemon juice for peanut sauce
3 shallots
2 garlic cloves
1 cup salted roasted peanuts
2 tbsp vegetable oil
1 tsp Thai red curry paste
1 cup light coconut milk plus additional for thinning
1 tbsp fresh lime juice
1/2 tsp brown sugar for gai yang sauce
2 small fresh hot red chiles (about 2 inches long) such as Thai or serrano
4 garlic cloves
3/4 cup sugar
1/2 cup water
2/3 cup white-wine vinegar
3/4 tsp salt

10. Lime Apricot and Soy Sauce Chicken Wings
Ingredients:
8 lb chicken wings
1 cup fresh lime juice (from 8 to 10 limes)
1 cup apricot preserves
1 cup soy sauce
2/3 cup sugar
4 large garlic cloves
Special equipment: 2 large roasting pans (about 16 by 12 inches)
