Hey!!! If you can’t stand the heat, get out of the kitchen! And that’s exactly what I did because finally Summer has arrived (it will last two whole days!!! Amazing!!!) so it’s time for another salad, and I know you want something else, but it’s too hot in my kitchen….lousy excuse I knowwww hahaha!

Let’s see, first we need smoked chicken. Okay, I’ve smoked a whole chicken before (read it here) ) but I never posted about my smoking adventures with chicken fillets…hmmm… I promise I will do that soon!! For now, I will stick with store bought smoked chicken, a good alternative when you’re in a hurry! And before I forget, a little note about the bacon bits. Make them yourself and store them in the fridge. You never know when you might need them for a salad and home made is always better.

Due to a lack of inspiration, time and an A/C I’m going to move forward to the recipe….

Ingredients

1 smoked chicken fillet

¼ cup mayonnaise

¼ cup crème fraiche

1 teaspoon Dijon mustard

1 teaspoon Lemon Pepper Californian Style

1-2 teaspoons curry powder (start with one teaspoon and “test-taste” because not all curry powders are equally strong in flavor)

Mixed greens that contains spinach and swiss chard

3 tablespoons bacon bits

1 avocado, coarsely chopped

1 hard-boiled egg, quartered

Start with making the dressing. Mix the mayonnaise and creme fraiche:

Add the mustard and lemon pepper:

Add the curry powder:

Slice the smoked chicken:

Dress the plate with the greens and the chicken:

On top of that it’s time for the bacon yaaayy:

The avocado pieces:

Drizzle with the dressing and add the egg:

Now you can add the dressing and look at this:

 

A quick and very tasty dinner for warmer days (or lazy days)! Now I’m ready for a dip in the swimming pool, where’s that handsome pool boy when you need him?!

For my Dutch readers:

1 gerookte kipfilet

3 eetl. mayonaise

3 eetl. creme fraiche

1 theelepel Dijon mosterd

1 theelepel lemon pepper (als je dit niet hebt, kun je ook wat citroen zest, zwarte peper, knoflookpoeder en gedroogde uitjes toevoegen naar smaak)

ongeveer 1 eetlepel kerriepoeder (naar smaak)

gemengde sla (spinazie/swiss chard o.a.)

uitgebakken spekjes

1 avocado

hardgekookt ei

Maak de dressing met de mayon, creme fraiche, mosterd, lemon pepper en kerriepoeder. Maak het bord op volgens de foto’s en voeg de dressing toe.
