Benjamin Newby loves nightlife. With a passion forged by the hedonism of the UK house scene in the mid 90’s and Early 2000’s he has been involved in all aspects of the industry for 14 years. With his experience and background in nightclubs and bars across the UK and Ibiza, he moved to the United States to focus on hospitality, operations and mixology in 2006.
He has become one of Chicago’s most celebrated mixologists, and was described by CS Men’s Book ]as “the quintessential man about town”. Benjamin became the Brand Architect for Hennessy USA in December of 2012, and in this position he has been bringing creative and unique Hennessy events and experiences to Chicago. We could not think of a better person to go to for an inventive National Mojito Day Recipe.

The Pink Mojito takes the classic mojito and gives it a special twist. Benjamin told us “we use to mint syrup to speed up production time and also reduce waste from the muddled mint. The tea is from Adagio Teas in Chicago and the rum has a great story. You can read all about it here but briefly the indigenous bird in Mauritius is the pink pigeon. Unfortunately they are endangered and sales of each bottle go to the Mauritian Wildlife Preserve. The reason the birds are becoming endangered is the male birds have a very large gay population.”

Taverna 750 Pink Mojito
- 2oz Pink Pigeon Rum
- 1oz Mint Syrup
- 1oz Wild Strawberry Tea Syrup
- 1.5oz Fresh Lime Juice
- Mix all ingredients.
- Topped with lemon and lime soda.
- Garnished with Pink Pigeon Stirrer, pink flower, mint sprig.
- Served over ice in Collins.
