Although the sale of truly healthy food only accounted for less than 4 percent of the total food sales in 2008, organic food sales increased by 15.8%, according to an Organic Industry Survey, conducted by Lieberman Research Group on behalf of the Organic Trade Association.

Breads and grains as well as organic fruits and vegetables accounted for the largest share of organic food sales, followed by beverages and dairy products. Health conscious consumers are gaining critical mass; irresponsible, and unaccountable producers like Smithfield Foods have convinced more and more consumers to buy organic.

“Organic products represent value to consumers, who have shown continued resilience in seeking out these products,” said Christine Bushway, executive director of OTA, in a statement.
