Chef Mario Gentile is the executive chef of Adoro Lei in New York. He was able to hone his kitchen skills as a child in his family’s restaurant in Brooklyn. He ventured to Rome, Italy to train under Michelin-star chef, Adriano Cavagnini of La Terrazza fame. He has received rave reviews for his work at Nove, and has some very new and exciting dishes planned for Adoro Lei.

We asked Chef Mario for a recipe that he thinks is best when enjoyed during the summer season. He handed us his recipe for Champagne Dressing, and told us that, “This is a dressing that you can easily drizzle on top of any fresh ingredient and enhance the dish. It is a sweet acidity, that goes great with summer fare.”
How to Make Chef Mario Gentile’s Champagne Dressing
1 garlic clove
1/4 cup fresh lemon juice
2 tablespoons of white balsamic vinegar
1 teaspoon of kosher salt
1 pinch of black pepper
1 teaspoon of dijon mustard
1/2 tablespoon of honey
3/4 cup of extra virgin olive oil
1 cup of olive oil
1. Put all of these ingredients in a blender and drizzle oil slowly until blended.
