There are healthy alternatives to those tasty recipes that we all love.  There are even healthy alternatives to those incredibly delicious Italian dishes we’ve all learned to love. Chef Sal Scognamillo of NYC’s landmark Patsy’s Italian Restaurant has updated the restaurant’s classics to promote a lighter, less belt-bulging, yet delicious meal.

Chef Sal Scognamillo’s Low Fat Baked Calamari Salad is a perfect summer time option because it is baked and does not contain any flour.  It also calls for egg whites, instead of the whole egg and uses low fat sour cream instead of regular mayonnaise, cutting down on half the fat. Serves 4

Ingredients:

  • 2 pounds cleaned calamari, cut into ½- inch rings1/3 cup olive oil
  • 1 Lemon (for wedges)
  • 5 eggs (for egg whites)
  • 1 cup of bread crumb

For low fat tartar sauce

  • ½ cup low fat sour cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons non-pareil capers (drained and rinsed)
  • 2 stalks of celery cut fine
  • 2 scallions (tips trimmed, chopped very fine)

Method:

  1. Pre heat oven to 400 degrees.
  2. Lightly coat the calamari with egg white and then bread crumb.
  3. In a large non-stick baking dish, toss with very little olive oil to coat bottom of pan.
  4. Bake in the oven at 400 degrees for 7 or 8 minutes.
  5. Turn calamari over and bake another 3 minutes.

For low fat tartar sauce

  1.  Mix all ingredients – sour cream, Dijon mustard, capers, celery, and scallions, and sprinkle with lemon.
