Recipe of the Day: Glazed Strawberry Pie

Because strawberries look like miniature, rounded hearts, this sweet fruit is recognized as an aphrodisiac.  Ancient Romans hailed strawberries as the fruit associated with Venus, the goddess of love.   In the French countryside, people revered strawberries as an important ingredient that sets the tone of a honeymoon.  Newlyweds are required to share a bowl of cold strawberry soup to ensure the air of romance.  Some civilizations also believed that strawberries play a role in determining the romantic fate of a person; by breaking the fruit and sharing it with the opposite sex, that very strawberry forges a romantic tie that can lead to everlasting love.

Recipe of the Day: Glazed Strawberry PieWhether you believe that strawberries are an aphrodisiac or not, this red fruit of love is one of the healthiest and tastiest fruit all around.  Create a Valentine sweet ending with this well-loved seductive dessert: strawberry pie.

Ingredients

Graham pie shell ingredients:

1 cup of graham cracker crumbs

1 tbsp brown sugar

¼ cup butter

Filling:

Fresh strawberries, whole or roughly chopped

1 cup sugar

2 tbsp. cornstarch

1 package sugar-free strawberry gelatin

1 ¾ cup cold water

Pinch of salt

Whipped cream (optional)

Directions:

Make the pie crust by combining the crackers, butter and sugar.  Press into a 9″pie dish, and bake in a pre-heated 350 degree F oven for 8-10 minutes.

Combine the sugar, cornstarch and salt.  Stir in the cold water.  Cook the mixture in a saucepan until the liquid is clear.  Add the gelatin.

Cool the gelatin in the refrigerator until it thickens (don’t let the gelatin turn solid)

Fill up the baked pie shell with the strawberries.  Pour the gelatin glaze.

Refrigerate for at least 5 hours.

Garnish with fresh strawberries and some whipped cream.
