Insane? Nah! Delicious? YES!
1 medium onion, chopped
2 cups smooth peanut butter
2 ribs of celery, chopped
1 3/4 cups light cream
1/2 cup butter
chopped peanuts (for garnish)
3 tbsp all-purpose flour
2 qt chicken stock
Cook the onion and celery in butter until soft and translucent.
Stir in the flour until well blended to create a thickening agent.
Add the chicken stock, bring to a boil while stirring.
Remove from the heat and blend with immersion blender.
Add peanut butter and light cream, stirring to blend thoroughly.
Return to low heat and heat until just hot (about 10 minutes).
Do not boil.
Garnish with peanuts and serve immediately.
