Cream of Cashew Soup

Cashew Nut Cream of Cashew SoupNot sure why people don’t cook with cashews more often. Cashews have lower fat content than most other nuts AND most of the fat is heart-healthy monounsaturated fat. This means they lower triglyceride levels which can be quite beneficial for people who suffer from diabetes. I say give this recipe a try, it is healthy, delicious and easy.

Ingredients

4 cups chicken stock
1 tsp curry powder
1 tsp salt
paprika & chopped chives for garnish
1 cup roasted unsalted cashews

Put all ingredients in stockpot and bring to a boil.
Pour the mixture into blender and puree until smooth.
Pour into bowls and garnish with chives and paprika.
Serve immediately.
