Not sure why people don’t cook with cashews more often. Cashews have lower fat content than most other nuts AND most of the fat is heart-healthy monounsaturated fat. This means they lower triglyceride levels which can be quite beneficial for people who suffer from diabetes. I say give this recipe a try, it is healthy, delicious and easy.
4 cups chicken stock
1 tsp curry powder
1 tsp salt
paprika & chopped chives for garnish
1 cup roasted unsalted cashews
Put all ingredients in stockpot and bring to a boil.
Pour the mixture into blender and puree until smooth.
Pour into bowls and garnish with chives and paprika.
