Chef Summer Recipes: Tung Ngo’s Summer Pineapple Sandwich

I fell in love with Nom Nom Burger in Charlotte at first bite, so I asked Chef & Owner Tung Ngo to share a summer recipe with us. His restaurant is awesome. Think fast casual with an Asian flare with incredibly good ingredients. I don’t normally wish for places to become chains, but if we could get a franchise of Nom Nom in NYC, I would definitely not be upset.

Here, the buns were made of sushi rice and they held the most delicate ahi tuna accented by avocado, spinach sprout, wasabi mayo, and a citrus soy dipping sauce. If you go, the Nom Nom Burger is a must have. Seriously delicious.

Marinade chicken 5 oz chicken breast overnight with salt, white pepper, rice wine, garlic powder
Two slices of fresh pineapple
One slice Swiss cheese
2 Strip of Crispy bacon
Fresh Cilantro
One table spoon of Fried Asian shallot
Two spoons Duke Mayo
½ of a Habanera pepper
Fresh spinach
Buttered burger buns – I order my from a company in Canada but your preference


Chopped habanera finely with one clove of fresh garlic
Mix mayo and chopped habanera with ½ spoon of olive oil and a pinch of coarse salt
One a flat top at 375 degrees grill chicken breast 3 min on both side with butter while covered – this will keep chicken breast moist and juicy
Charbroiled sweet pineapple until tender
Top pineapple with Swiss cheese until melted
Grill burger buns on flat top till golden with spread of butter


Spread habanera mayo on bottom bun
Fresh spinach
Grilled chicken
Charbroiled pineapple with Swiss cheese
Fried Asian shallot
Crispy Bacon
Fresh Cilantro

ENJOY – Best with fried sweet potatoes

Sun – Thu: 11 AM – 09 PM
Fri – Sat: 11 AM – 10 PM
