Foods to Eat in 2012: Celery
It’s not just for wings. That’s right, celery is way more versatile and incredibly good for you. Besides it being low in calories, it yearns to be crunched…so it takes longer to eat. What else do I love about it? It’s loaded with good stuff:

Calcium
Folate
Fiber
Potassium
Sodium
Vitamins B3, C, & E
What does this mean?

It’s a perfect snack (as a crudite) because it is super low in calories. When in dishes it adds a sliver of salinity (so you can skip the salt). This means more hydration for you. Celery also helps the growth of red blood cells and removes waste from the body. I’s day it’s a win.
Some Celery Tips
Eat it when you’re under stress, it’s soothing.
Eat it in the summer to cool off.
Make a Bloody-mock-Mary and add a little extra celery.
How to Eat It?
Make a quick and refreshing celery apple salad. Chop 1 celery rib and one apple. In a bowl mix 2 tbsp yogurt, lemon juice and cilantro. Mix together and enjoy.
