Ca Va, located at the heart of the theater district is one of the few restaurants that provides a pre and post theater menu.
It also has a unique distinction of harvesting honey on its own rooftop. Consequently, each item on the honey menu has a honey ingredient. Chef Matthew Corbett designs a new menu every day (which is different from the regular menu), all items of which are inspired by honey.
It was amazing how one can actually achieve a local touch to the menu as well as design a new menu everyday. I “had” to try the menu he had designed for the day!
The first course for the day was “Garden lettuces” salad. It was made of all different herbs, edible flowers. It had a dressing of honey vinaigrette and was also served with raspberries and yogurt dressing. The first bite had spring written all over it! It was so light and refreshing!
The main course was “TS Honey Lacquered Duck Leg Confit”. The duck was very well seasoned and almost had two different textures, crisp and buttery on the top and soft meat inside. It was served with creamy celery root puree which had a touch of the sweet honey and the rosemary roasted potatoes. The combination of the sweet and creamy puree with the savory duck was perfect!
Tasting the first two courses made me crave for the last course and I couldn’t wait to see what came next! The dessert was “Honey Almond Madeline” served with Grand Marnier dark chocolate sauce.
The course was the highlight of my lunch. I could just feel the Madelines being fresh out of the oven and can definitely say that they were the best I have had in a long time.
