Hooray For Summer; and Basil

Tomorrow is the first day of summer and the official start to basil season (one of my favorite ingredients). Basil is part of the mint family and is very easy to grow in warm, dry weather (you can even grow some on a small planter on your window sill). Most of us are familiar with Sweet Basil which is commonly used in Italian dishes, but there are many (over 60) other varietals to experiment with (Lemon Basil, Thai Basil, etc…).

When cooking with basil, make sure to make this one of the last ingredients. It is quite fragile and cooking can quickly destroy its flavors.

It is said that basil has antibiotic and anti-inflamatory qualities and that it is good for your heart. Basil also contains flavonoids that are said to protect cells from damage.  It is  also a source of vitamin K, iron, calcium and vitamin A (which is great for your heart). It also contains dietary fiber, manganese, magnesium, vitamin C and potassium.

Your basil should have colorful green leaves free of yellow or dark spots. Once you have purchased it, put it in a plastic bag with a moist paper towel. If you want to keep it even longer, just put it in a plastic bag and freeze it until you need it next.
