Chef Matt likes to take simple ingredients and prepare them in the best way to bring out their natural flavors. He then pairs these items with other ingredients that complement while keeping the dishes simple and straight forward. Understanding the long hours, dedication and sacrifice required to be a chef, Matt also believes in a work life balance where he enjoys such hobbies as scuba diving, cycling and training for triathlons with his wife.

Chef de Cuisine Matt Schindler Waldorf Astoria nyWe asked Chef Matt to share a recipe with us that he felt captured the spirit of the fall in New York. He offered his Peacock Alley Salad with Rooftop Kale. The kale comes from the Waldorf’s new rooftop garden. It sits on a gorgeous 20th floor space with the most beautiful views of the Chrysler Building.  Chef Matt heads to the roof daily to pick garden items and use them in daily specials.

Peacock Alley Salad with Rooftop Kale Salad by Chef Matthew Schindler

Description:

Grilled asparagus spears (long) on the bottom of the bowl poking out and up the rim
Kale rooftop oregano and mescaline greens tossed with green goddess dressing
Charred corn kernels cut off the cob
Teardrop tomatoes cut in half
Top the salad with crisp pancetta lardon and sliced hardboiled egg

Allergies: pork, egg, fish, dairy

Roof top kale, chiffinade
Meslun greens
Grilled asparagus
Chopped hardboiled egg separated yolks from the whites
Fresh picked oregano from the garden
Charred corn kernels cut off the cob
Teardrop tomatoes
Julienne roasted red bell peppers

Choice of: hot grilled prawns / chilled lobster meat / cold grilled chicken

Sauce: green goddess dressing

(Makes approx. 8 c.)

8 tsp. chopped anchovies
4 cloves chopped garlic
3 c. mayonnaise
3 c. sour cream
2 c. chopped parsley
1 c. chopped tarragon
12 Tbl. Fresh lemon juice
Salt and black pepper to taste

Method: puree all ingredients together in the robotcoup and season to taste.
