Antico Noè is the New York branch of a classic Florence panini shop, offering pressed sandwiches with signature combinations. We had a chance to talk to Michael Grant, the owner of Antico Restaurant Group, who shared with us a few tidbits about the restaurant, their food, concept, and business philosophy. Here’s what we learned:

FriendsEAT: Tell us a little something about Antico Noe.

Michael Grant: Famed Italian panini shop Antico Noè makes its way across the pond for its first outpost outside of Italy. After over 70 years of building a cult-like following of both locals and visitors alike that frequent the tiny store front in an arcaded alley off the Piazza San Pier Maggiore in Florence, Italy multiple times per week, the iconic brand gets its first expansion courtesy of two young entrepreneurs who met while living in Florence nine years ago. The U.S. version of Antico Noè will replicate the Tuscan legend down to its last breadcrumb. The US-based team has studied and trained at the Florence location learning the various secret bread and sauce recipes, as well as coming to understand the magic of the little “sandwich shop” – all of which they will replicate in the US locations. The initial 1600 sq ft Midtown Manhattan location will at first feature the top 10 best sellers out of the 25 offered at the original, in addition to a selection of salads. The authentic Tuscan panini served at Antico Noè New York will be made using the freshest ingredients sourced from the finest Italian purveyors in keeping with the original’s high standards.

FE: Tell us a cool story about the restaurant.

Michael Grant: While studying abroad in Florence in 2007, Indiana University Kelley School of Business I met local restaurant manager Vinny Dautaj. We formed a fast friendship that would continue for years leading up to Vinny’s marriage to an American girl and subsequent move to New York. We would often get together to talk about our lives, jobs and shared entrepreneurial vision. No matter the “great idea,” the topic would come back to Florence and the incredible business Antico Noè had in Florence. During my time there, I have become a multi–time-a-week regular like most students and was always impressed by the loyal following the minuscule shop boasted, realizing there was something almost magical about the place. On Vinny’s next trip home to Florence, he approached the owners about allowing us to bring the authentic panini to the U.S. after a long negotiation process.

FE: What is your restaurant philosophy? Is there something that everyone strives for with each action taken at your restaurant?

Michael Grant: Quality and time is everything for our clientele. Our philosophy and mantra is to offer authentic Italian panini using only the highest quality ingredients at an affordable price in a timely manner.

Michael Grant: We are the only truly authentic Italian panini shop “imported” straight from Florence where the Antico Noe brand has become a beloved staple for the last 70 years.
